Pabú is the personal project of chef Coco Montes, who trained mainly at L'Arpège, a three-Michelin-starred restaurant in Paris.

At Pabú restaurant we focus on the vegetable world, although we also include fish and meat when they are of extraordinary quality.

We elaborate nine dishes each day that can be taken as a as a tasting menu or as an a la carte a la carte selection and it does not have to be a full table.

We cook with fresh ingredients received daily, always taking care of the micro-season in which we are.
