At Pabú, respect for our winemakers is one of the fundamental pillars of our proposal. Our wine list reflects this philosophy, with an extensive liquid selection that seeks to convey the care that the producers put into each bottle. We are passionate about the projects of winemakers who care for their land and fruit, offering natural wines that preserve the best of the countryside. Winemaking should be kept to a minimum, just enough to allow nature to provide us with quality wines.
Our wine list has more than two hundred references of still wine and about 40 references of the prestigious AOC Champagne, providing a wide range of options for the most demanding palates.
All our wines rest in an air-conditioned air-conditioned space and carefully designed by a blacksmith from Belmonte de Tajo, Madrid, which ensures the ideal conditions to preserve their integrity.
The menu is organized by wine styles and was designed by Coco, with each chapter illustrated by special family and friends. This gives it a personal touch that stands out from traditional wine lists. We change and nourish our wine list daily, constantly offering exclusive wines that may not yet be reflected on our website.
You can download our updated wine list before your visit, although there is always the possibility that we may have some new reference. In addition, we offer the option of accompanying our menus with two carefully selected liquid harmonies to complement the dining experience.
