At PABÚ, we see cooking as an act of responsibility. What we serve at the table is the result of conscious decisions — from the origin of each product to the way we prepare, share, and honor it.

Our commitment to sustainability is not an isolated gesture, but a way of living and cooking.

The microseason: the soul of our cuisine at PABÚ

We have absolute respect for ingredients and their seasonality. We select them daily, based on what nature offers here and now. We work closely with small-scale producers around us, who grow with respect and without haste. We prefer the small, the unique, and the ones with a history.

 

All our ingredients have something to say, nothing happens by chance.

Comprehensive use of traditional ingredients and cooking methods

We create our cuisine with a philosophy of total utilization. Each ingredient is processed in its entirety, with no room for waste. At Pabú, nothing is thrown away. Everything is transformed using cooking methods that enhance the natural qualities of each ingredient, enhancing its flavor and enjoyment.

Energy, water and resources

We put great effort into optimizing resources in the kitchen and dining room with simple but effective measures. We focus on efficient appliances, LED lighting, plastic reduction, water consumption control, and responsible cleaning processes. Our team is trained to operate with conscientiousness in every daily task.

Relationship with our environment. The importance of our territory

We believe in projects that connect with their communities; this is vital. That's why we collaborate with responsible suppliers and agroecological projects. We choose ingredients that respect the land and processes that respect people. Caring for what nourishes us also means caring for those who make it possible.
