We have absolute respect for ingredients and their seasonality. We select them daily, based on what nature offers here and now. We work closely with small-scale producers around us, who grow with respect and without haste. We prefer the small, the unique, and the ones with a history.

We create our cuisine with a philosophy of total utilization. Each ingredient is processed in its entirety, with no room for waste. At Pabú, nothing is thrown away.
