We begin to feel the first warmth that guides us toward spring. Plum and almond trees bloom subtly, cherry trees are approaching, and the first eagerly awaited red fruits appear.
We are in the peak season for pods, and it is a pleasure to welcome the delicate peas and yellow snow peas. Artichokes from the north of our country are flourishing, accompanied by asparagus. Let us allow ourselves to be enveloped by the freshness of the spring fields.
We turn to fish to make the most of the last two months of shellfish and bivalves at their peak.
We continue with hunting and young poultry, which are now fresher and more tender. This is a season to fully enjoy the flavours of both the sea and the countryside.
