At PABÚ, we cook every day with the sole purpose of serving you.
Therefore, each reservation represents a significant commitment for our team and allows us to offer a carefully curated and personalized experience.
Please keep the following conditions in mind when booking:
- In the event of full or partial cancellation with less than 48 hours' notice, or if a confirmed guest does not show up, a fee of €100 per absentee will be applied.
- The minimum consumption is €100 per adult and €50 per child over 4 years old, regardless of whether or not consumption is made.
We understand that these measures may be inconvenient, but they are necessary to maintain quality and commitment to each table.

We do our best to answer all calls every day , at any time. However, we ask for your understanding if you call during service: Coco Montes , our chef and host, personally answers the phone, and if he's cooking, it may take a few minutes to respond.
If we can't get back to you right away, we'll return your call as soon as possible.
Regular opening hours
- Tuesday to Thursday: meal service
- Friday: lunch and dinner
- Saturdays: dinner service
These hours may vary slightly each week , so we kindly recommend confirming them with us directly, even if you have checked our profile on Google, other portals or have visited PABÚ previously.
Confirmations and peace of mind
At PABÚ, we always strive for your comfort. Therefore, once your reservation is confirmed by phone, it is 100% guaranteed, unless we specifically indicate otherwise.
Don't worry: we don't make unnecessary confirmations or interrupt your day with repetitive reminders.
Your table is yours for the entire duration of the service.
At PABÚ, we do not operate in shifts. You are welcome to enjoy your experience at your own pace, for as long as you wish.

The full experience can last between 2 and 2.5 hours, depending on the number of courses selected and the pace of each table. We adapt to your timing.

Yes. All reservations require a credit card guarantee. In case of cancellation within 48 hours or no-show, a fee of €100 per person will be charged.
We offer three changing tasting menu lengths, guided by micro-seasonality, which can be personalised through a modular menu. Each day we compose 8 unique dishes, never repeated.
Yes. We can adapt to almost all dietary restrictions and allergies, including vegetarian, vegan, gluten-free, and lactose-free. We kindly ask to be informed in advance, as otherwise we cannot guarantee a trace-free kitchen.
The restaurant is designed for an adult audience. However, as an exception, we welcome children of all ages - preferably over 12 - provided they can enjoy the same menu and atmosphere.
We do not require formal attire, but we recommend elegant, well-groomed clothing in keeping with the dining experience.
Yes. Personalised gift cards or vouchers are available through our website, valid for 6 months from the date of issue.
We offer corkage service, limited to 2 bottles per reservation:
• 1st bottle: €60
• 2nd bottle: €80
