Pabú, the Michelin-starred restaurant next to the Bernabéu
Pabú is chef Coco Montes's Michelin-starred restaurant in Madrid, at Calle Panamá 4, near the Santiago Bernabéu stadium. Since 2023 it has earned, among others, a Repsol Sun, Restaurant of the Year 2025 from the Madrid Academy of Gastronomy and 5 Radishes from We're Smart Green Guide.
A Michelin star since the 2025 edition
The MICHELIN Guide awarded us our first star in November 2024, for the 2025 edition, and we kept it in 2026. In 2025 we also received a Sun from the Repsol Guide, Spain's benchmark gastronomic distinction.
Restaurant of the Year, twice

Madrid Academy of Gastronomy: Restaurant of the Year 2025, at the 9th edition of its awards.
In 2026, the Macarfi Guide ranked us 14th among Madrid's best-rated restaurants.
A wine list recognised by Wine Spectator
In June 2026, Wine Spectator gave us its Best of Award of Excellence, the second-highest honour of its Restaurant Awards. It recognises the quality, diversity and depth of wine lists at restaurants around the world.
At Pabú the entire list is served by the glass: around 500 wines, including some 80 champagnes. Every course on the menu can have its own wine.
Vegetables take centre stage
In October 2026 we received 5 Radishes from We're Smart Green Guide, its highest distinction. The guide is the international reference for fruit- and vegetable-led cuisine, the heart of our micro-seasonal cooking.

Opinionated About Dining (OAD) ranked Pabú 4th on its OAD Europe 2025 – Top New Restaurants list, a selection of Europe's best new restaurants.
