Coco Montes
Coco Montes trained at Le Cordon Bleu Paris, earning the Grand Diplôme in Cuisine and Pastry, and was a disciple of Alain Passard at the three-Michelin-starred L’Arpège, where he worked for six years and led the restaurant’s international events in cities such as Shanghai, Bangkok, Los Angeles, Sydney, and New Delhi.
He has also worked at renowned establishments like Zalacaín and Azurmendi (three Michelin stars), and stands out for a creative yet tradition-rooted cuisine, using carefully sourced ingredients from producers who honour natural processes.

PABÚ, led by Coco Montes, has been awarded a Michelin star for 2025 and a Repsol Sun. It has also received accolades such as the Excelencias Award for Chef of the Year 2024 and Restaurant of the Year from the Madrid Academy of Gastronomy.
Other honors include Rookie of the Year by the Macarfi Guide, Best New Restaurant by Tapas Magazine, and Restaurant of the Year from the Cofradía de la Buena Mesa.
