Pabú's micro-seasonal cooking travels to California
In July 2026, chef Coco Montes cooked a Pabú dinner at El Encanto in Santa Barbara, California, as part of its guest chef dinner series. It was the first time Pabú's micro-seasonal cooking crossed the Atlantic.
A menu created at the farmers' market
We did it our way. That same morning Coco went to the Santa Barbara farmers' market and designed the eight-course menu there, with what he found. It is what we do every day in Madrid: the menu doesn't exist until the produce arrives.
What was on the table
Poached cherry tomatoes with sea urchin
Chilled tomato soup with peach sorbet
Smoked aubergine
Sweet corn with lemongrass beurre blanc
Wild Atlantic halibut
Courgette flower with wagyu
Peach with vanilla cream
To go with it, Spanish wines from Rioja, Bierzo, Rías Baixas, Aragón and Ribera del Duero, plus champagne.
Pabú, away from home
Taking Pabú beyond Madrid helps us see our cooking with fresh eyes. This year we also cooked in Sofia (Bulgaria), and more trips are on the way.
If you are visiting Madrid, our table awaits you at Calle Panamá 4, a few minutes from the Santiago Bernabéu stadium.
