At the head of PABÚ is Coco Montes, trained at Le Cordon Bleu Paris and a disciple of Alain Passard at the three Michelin stars: L'Arpège.
He has worked at restaurants such as Zalacaín and Azurmendi and directed international projects in Shanghai, Los Angeles, and Sydney. At PABÚ, he has found his niche: a creative and sophisticated cuisine with deep roots and absolute respect for the ingredients.

PABÚ has been awarded a star in the MICHELIN Guide 2025 and 2026. In addition, it has received the Repsol Guide Sun award 2025 and the Excelencias Award for Chef of the Year 2024 in Spain.
The We'Re Smart Green Guide has awarded Pabú 5 Radishes in its vegetable guide, stating that it is an extraordinary, innovative and creative vegetable restaurant.
The Macarfi Guide has awarded PABÚ the title of Rookie of the Year 2024 in Madrid and has placed it second nationally.
The Metropoli Guide names him Revelation Chef 2024 and Honorable Mention for Best Restaurant for PABÚ.
In recognition of its innovation and excellence, PABÚ has been chosen as Best New Restaurant 2024 by the prestigious gastronomic magazine Tapas, from the Forbes group.
The Madrid Academy of Gastronomy names PABÚ Restaurant of the Year 2025 in Madrid.
Coco Montes is named Chef of L'Avenir by the International Academy of Gastronomy.
