We deeply respect seasonality and select each ingredient based on what nature offers us each day.

How do we prevent food waste at PABÚ?

Ours is a kitchen of total utilization: nothing is thrown away, everything is transformed. We use traditional techniques to extract the best from each ingredient, from root to leaf.

This approach allows us to be consistent with a conscious gastronomy based on balance, health, and respect. Therefore, each offering on our menu is also aligned with those seeking healthy eating and healthy food without sacrificing flavor.
