Pabú and Fusion19: a six-hands dinner in Mallorca

On 24 October 2026, chef Coco Montes took Pabú's cooking to Fusion19, in Playa de Muro (Mallorca), to cook alongside its chefs Aleix Serra and Marc Marsol. A six-hands dinner between two restaurants that each hold one Michelin star and a Repsol Sun.

A nine-course menu built on the Mallorcan larder

The three chefs created a nine-course menu for that night only. It was built on the Mallorcan larder, Fusion19's own kitchen garden and seasonal produce, which is what both restaurants do best.

Arantxa Calonge, Fusion19's maître d' and sommelier, designed the pairing from a cellar of more than 1,200 Mallorcan, Spanish and international wines.

A friendship that began in Madrid

This dinner was the second chapter of a collaboration that began in February, when Fusion19 came to cook at Pabú on the 26th and 27th. We share the same way of understanding cooking: absolute respect for the produce and for those who grow it.

Thank you to Aleix, Marc and the whole Fusion19 team for making us feel at home. While we prepare the next chapter, we look forward to welcoming you in Madrid.
